Beautiful golden yellow color. Fine to very fine bubbles. Very fine and subtle nose. Notes of yellow fruit, pastry cream and minerals. Fresh and full mouthfeel.

The vintage - The 2018 vintage was of very good quality which allowed us to have fresh, light and fruity wines.
Terroir - Kimmeridgian clay and limestone soil and subsoil. This sits atop of Jurassic bedrock formed around 155 million years ago. Very rich in clusters of small oyster fossils called Exogyra Virgula.
The vineyard - 9600 vines per ha. Mostly Guyot Poussard pruning. Vines cultivated organically since 2003.
Vinification - Manual harvesting at the optimum desired maturity - 11% vol.. Transported in small cases. Pneumatic pressing. Separation of pressed juices: Head, heart and tail. Static settling of 12 to 15 hours.
Fermentation in stainless steel tanks. Native yeasts
Aging in stainless steel tanks.
Bottled in April 2018.
Disgorgement in November 2019.
Dosage 4 g/l.
SO2 total : 31mg/l
Pinot Noir : 60%
Chardonnay : 40%
